Open-Faced and Over-Flowing

A great way to cut unnecessary carbs out of your lunch is to make an open faced sandwich, which uses 1 slice of bread instead of 2. Start with some whole wheat bread, add your protein, sneak in some healthy fats, and then throw spinach over the top. It’s so easy you won’t even believe that it’s a nutrient powerhouse.

What I love about this open faced sandwich is that I use salmon pâté. I actually don’t like fish very much, but pâtés are a great way to sneak salmon into my diet. Try to use fish as your protein every so often, especially salmon, in order to get your essential Omega-3 fatty acids.

Do it yourself:

  • whole wheat bread — find a brand with as few ingredients and preservatives as possible that looks fresh.
  • protein — my sandwich had salmon pâté, but any other type of pâté would work, or even sliced meat.
  •  healthy fats — mashed avocado
  • spinach
