Especially in the summer, there is nothing more perfect than a fish taco. I picked mine up at a farmer’s market, but they’re super easy to make yourself. Plus, they’re low in heavy carbohydrates (unlike a plate of pasta) and high in protein!
And of course, I’ve loaded up the side of my plate with plenty of veggies. Try cooking up a variety of vegetables instead of just one. It’s more tasty that way, and you get a lot more nutrients.
Do it yourself:
- small tortillas (feel free to go whole wheat if you’re feeling extra healthy!)
- fish (cod, salmon, or whatever you want!)
- cabbage and/or shaved Brussel sprouts
- shredded carrots
- optional: sprinkle some cheese on top and/or a little spicy sauce –I recommend chipotle
- veggies on the side: I went with broccoli, squash, and yellow & green beans
