A Lunch for Munchers

Staring down at a sandwich makes me feel hungry. Even if the sandwich is gloriously overflowing with ingredients, there’s just something about it that leaves me wanting more. The thought of eating one thing is psychologically unsatisfying to me. For all the snackers out there who feel the need to munch like me, this is the perfect lunch.

The other benefit to having a smorgasbord is that you can intentionally hit all your different food groups. Instead of feeling limited, you can pick and choose various foods that will provide you with an assortment of flavors and nutrients.

Do it yourself:

  • protein: scrambled egg with spinach and a touch of cheese
  • carbs: thin whole wheat crackers with sharp cheddar cheese for flavor, calcium, and protein
  • healthy fats: nut mixture of cashews, almonds, and pistachios
