Fish Taco: Inside Out

In keeping with my latest obsession with bowls, I decided to make the bowl version of a fish taco.

The amazing thing about a bowl is that you can toss in veggies that you normally wouldn’t eat otherwise. Although broccoli would probably never make an appearance in my taco, it blends in perfectly in a bowl.

This bowl is one of my all time FAVORITES. The flavors are to die for, and it’s a delicious way to sneak more fish into your diet!

Do it yourself:

  • Base: brown rice (healthy whole grain carbs!)
  • Veggies: broccoli and carrots
  • Protein: lightly battered cod (fresh is always best, but I picked up this one in the freezer section of the grocery store)
  • Toppings: avocadoooo!! (of course)
  • Sauce: low-fat/ low-cholesterol chipotle mayo (check Whole Foods for this one: Sir Kensington’s Chipotle Mayonnaise)
