Guac out of here.
When I decided to try making homemade hummus, I had no idea it would be this good. Since I’ve basically become an avocado addict, I had to throw some in there. The result: a glorious, amazing, magical guacamole-hummus hybrid. With the lightness of hummus and the rich flavor of guacamole, minus the high calories of pure guacamole, it is the ultimate dip. Plus, try throwing in some spinach like I did for an extra healthy boost (you don’t even taste it!). Finish it off with some whole wheat crackers or raw veggies. I went with my favorites: Back to Nature’s sea salt adzuki bean crackers.
Do it yourself:
- about a cup of chickpeas (honestly I didn’t measure it out — just go for a hearty amount)
- half of an avocado
- 2 tablespoons of olive oil
- a handful of spinach
- salt and pepper to taste (optional: add cumin and garlic if you like more flavor)
- a squirt of lemon (or lime) juice
Just blend it all together, stirring as you go if the thick mixture is a little difficult for your blender.
