I know what you’re thinking: pancakes?? But believe it or not, pancakes can be incredibly healthy. These pancakes are flour free and full of protein. Plus, they taste amazing.
Ingredients:
- 2 eggs
- 1 mashed banana (the riper/browner, the better)
- 1 packet of quinoa & oats instant mix (you can buy them at Whole Foods, or you can just add about 1/2 a cup of quick oats)
- a touch of cinnamon and vanilla for flavor
- optional add-ins: peanut butter, blueberries, or dark chocolate chips
Once you’ve mashed up your banana in a bowl, add the 2 eggs. Whisk this all together. Then, dump in your oats. Add some cinnamon and vanilla, mix it all up, and voila! Pancake batter! You cook them on a stovetop pan like you would with ordinary pancakes.
Personally, I like mine with blueberries and a few chocolate chips. The pancakes have a good amount of protein because of the eggs, but for an additional protein boost, add peanut butter.
