The fun thing about pita bread is that you can stuff it to the MAX with tasty fillings. Unlike slices of sandwich bread, a well packed pita pocket will contain all that goodness without making a giant mess. In addition, the thin pita is less carb heavy than bread, bagels, etc. Here, I went with a simple filling that checked off all the major necessities of a balanced meal.
Do it yourself:
- healthy carbs: whole wheat pita bread
- protein: scrambled egg
- vitamins/minerals: kale
- optional additions: feel free to add avocado, cheese, and/or tomato in your pockets for more flavor and nutrients.
