Don’t let the tidy picture fool you: 0.2 seconds after it was taken, this plate became a disorganized mess of yumminess.
This plate was inspired by leftovers night. Essentially, I threw together all the tasty things in my fridge and hoped they would complement each other (spoiler alert: they did). They came together so well that I’ll have to recreate this masterpiece again sometime soon!
Do it yourself:
- pesto quinoa
- boiled potatoes with olive oil and herbs (I picked these up at Fromaggio)
- avocado
- spinach and feta salad with Paul Newman’s olive oil & vinegar dressing
- tomatoes
- salmon
This meal gave me tons of protein from the salmon, but also a lot of plant based protein (esp from the quinoa); healthy fats (avocado and salmon); vitamins and minerals (spinach and tomato); and a healthy serving of carbs (potato).
