This bowl tasted sweet, simple, and warm. The light cream sauce (using greek yogurt instead of heavy cream) over quinoa and squash made a sublime combination. A few pieces of broccoli and some pine nuts on top completed the dish. Quinoa bowls are a brilliant substitute for pasta cravings. With the right sauce, its still tastes satisfying but gives you far more nutrients than regular pasta would.
Do it yourself:
- healthy carbs + plant based protein: quinoa (boiled — just like rice)
- veggies (steamed): green and yellow squash along with broccoli
- toppings: pine nuts and light cream sauce (greek yogurt, parmesan cheese, lemon juice, and a touch of white wine)
